Russian Chicken Recipe! (...actually, guys, I'm not sure I can still technically call it "Russian Chicken", since I now use French dressing, but that's what my aunt called it, so I'm sticking with it)
This super simple recipe comes from my aunt. When I was young, my mom went through kidney failure and had to be on dialysis three times a week. To help out, her sister sent her a bunch of easy recipes and this one quickly became our family's favorite. The original recipe calls for only three ingredients: A bottle of Russian dressing, a jar of apricot jam, and a packet of dry onion soup mix. Oh, and chicken, so I guess that's technically four ingredients. Bake that all together at 350 degrees for one hour and you've got something sweet, tangy, and oh so delicious! I usually serve it with rice pilaf and a green vegetable as you can see in the photo above. If you want to try the original recipe (and your supermarket carries Russian dressing) go for it! However, a few years back my local supermarket stopped carrying Russian dressing, and I decided dry onion soup mix had way too much sodium in it, so I've altered the recipe to suit my needs. My *updated* Russian Chicken is now perhaps more appropriately called "French Chicken" because I use French dressing, but I still call it Russian Chicken because, well, that's just what it's called. I never measure when making this recipe, so here are my guesses on ingredient amounts:
1/3 bottle of French dressing.
1/2 jar of apricot jam
2 tablespoons of dried onion flakes
1/2-1 tablespoon of chili powder
1 tablespoon of Worcestershire sauce.
(I really should have measured these, guys. Sorry! The pictures below should give you at least *some* idea.)
